Can someone explain polar dimensions clearly to me? I'm trying to see if it fits good into the story I have.

Polar Dimension is a mini dimension which is attached to the Normal Dimension. It's used to contain Dimensional Stability Generator, because the Normal Dimension can't hold it.

Do you think a dimension needs more than just two? Like a whole 6-by-8 split apart?

Based on the dialogs surrounding it, Polar Dimensions are meant to be very unusual.  Also, if the events of VVVVVV were publicized, it would highlight the dangers of Polar Dimensions, so even less people would be willing to use them.

the Polar Dimension was only a temporary and faulty solution to stabilization, as told by most of the terminals in the game. it's implied, should you collect all trinkets, that
(spoiler, highlight between the brackets)
[the crew successfully combines their own research with what's found in the secret lab to come up with a permanent fix with no side-effects]
they're also very overused and you probably shouldn't put them in your level unless it's a prequel to the main story
